This is my first Z-wave sensor and I try to setup with my RaZberry.

I don't know why the FGMS-001 did not wake up every 600s , any idea?

In your device description (second image) I do miss the lower part. There should be something under the heading of wake-up notifications.

Well you did specify a wake-up interval of 300 seconds there. That is exactly the 5 minutes that is shown in your staus report.
Do enter 600 in this box, and push the Apply configuration for this device button. After the next cycle you should see the new interval in your status
