I am using two channels, how i can say that this two channels is only 1 instance in the Z-Wave Expert UI?

You can't. This is by desing in Z-Uno to simplify our code, your code, give more room for user space and make it better work in all controllers.

Both ways are allowed by the Z-Wave protocol, but Z-Uno approach simplifies the support by controllers.
